This is how you know you are married to a chef! Guanciale hanging in my fridge. Guanciale is pig jowl and apparently this will be hanging in my fridge for 3 weeks! My husband will be using this “bacon” to flavor various dishes for Thanksgiving. He rubbed it with various spices and left it in a 9×13 pan flipping it every so many days and now we are in the three week hang phase.
